Salg\u0131 ballar\u0131, \u00e7am ve me\u015fe ballar\u0131d\u0131r. \u00c7i\u00e7ek ballar\u0131 ise, pamuk\u000b(Gossypium barbadense), kestane (Castanea sp.), ay\u00e7i\u00e7ek (Helianthus annuus), yayla,\u000bkar\u0131\u015f\u0131k \u00e7i\u00e7ek ve narenciye ballar\u0131d\u0131r. Bu ballarda baz\u0131 fiziksel ve kimyasal analizler\u000bger\u00e7ekle\u015ftirilmi\u015f ve daha sonra HPLC kullan\u0131larak farkl\u0131 ballar\u0131n\u0131n fenolik asit ve flavonoid\u000bprofilleri belirlenmi\u015ftir. Fiziksel ve kimyasal \u00f6zellikleri a\u00e7\u0131s\u0131ndan; \u00e7am ballar\u0131, y\u00fcksek pH\u000bde\u011feri (4,36), d\u00fc\u015f\u00fck fr\u00fcktoz ve glukoz (30,61 ve 23,51 g\/100g), d\u00fc\u015f\u00fck glukoz\/nem oran\u0131\u000b(1,49) g\u00f6stermi\u015ftir. Me\u015fe bal\u0131, en y\u00fcksek pH (5,05), d\u00fc\u015f\u00fck fr\u00fcktoz ve glukoz (30,37 ve\u000b19,65 g\/100g) ve \u00e7ok koyu renk de\u011ferini (L = 23,84) i\u00e7ermi\u015ftir. Kestane bal\u0131, \u00e7ok y\u00fcksek\u000bpH (4,81), en y\u00fcksek protein (1292,75 \u00c2\u00b5g\/g), d\u00fc\u015f\u00fck glukoz (21,89 g\/100g), en y\u00fcksek\u000bfr\u00fcktoz\/glukoz (1,69) ve en d\u00fc\u015f\u00fck glukoz\/nem oran\u0131 (1,32) de\u011ferlerini i\u00e7ermi\u015ftir. Pamuk\u000bbal\u0131, olduk\u00e7a y\u00fcksek pH (3,92), en y\u00fcksek glukoz (34,73 g\/100g), en d\u00fc\u015f\u00fck fr\u00fcktoz\/glukoz\u000b(1,12), en y\u00fcksek glukoz\/nem (2,03) ve \u00e7ok a\u00e7\u0131k renk de\u011ferini (L = 29,42) i\u00e7ermi\u015ftir.\u000bAy\u00e7i\u00e7ek bal\u0131, en d\u00fc\u015f\u00fck pH (3,38), en y\u00fcksek fr\u00fcktoz (40,01 g\/100g) ve \u00e7ok y\u00fcksek glukoz\u000b(33,40 g\/100g) i\u00e7eriklerine sahiptir. Bu \u00e7al\u0131\u015fmada ayr\u0131ca, HPLC kullan\u0131larak 15 fenolik\u000bbile\u015fik saptanm\u0131\u015ft\u0131r. Fenolik asitlerden kafeik ve p-kumarik asit; flavonoidlerden ise\u000bpinokembrin ve krisin bu ara\u015ft\u0131rmada kullan\u0131lan b\u00fct\u00fcn ballarda saptanm\u0131\u015ft\u0131r. B\u00fct\u00fcn salg\u0131\u000bballar\u0131, y\u00fcksek konsantrasyonlarda protokate\u015fik asit i\u00e7erirken \u00e7i\u00e7ek ballar\u0131n\u0131n tamam\u0131na\u000byak\u0131n\u0131nda protokate\u015fik aside rastlan\u0131lmam\u0131\u015ft\u0131r. Me\u015fe bal\u0131, \u00e7am ballar\u0131nda hi\u00e7 saptanmayan,\u000by\u00fcksek konsantrasyonlarda ellajik asit i\u00e7ermektedir (336,75 \u00c2\u00b5g\/100g). Di\u011fer taraftan, bu\u000b\u00e7al\u0131\u015fmada kullan\u0131lan salg\u0131 ballar\u0131nda hi\u00e7 saptanmayan bir flavonoid olan kamferol; pamuk,\u000byayla ve kar\u0131\u015f\u0131k \u00e7i\u00e7ek ballar\u0131 gibi bir\u00e7ok \u00e7i\u00e7ek bal\u0131nda bulunmu\u015ftur. Pamuk bal\u000bnumunelerinin 5&#8217;te 4&#8217;\u00fcnde kuersetin saptanm\u0131\u015ft\u0131r. Metil sirinjik asit, \u00e7ok y\u00fcksek\u000bkonsantrasyonlarda bir\u00e7ok kar\u0131\u015f\u0131k \u00e7i\u00e7ek bal\u0131nda ve \u00f6nemli konsantrasyonlarda yayla\u000bballar\u0131nda belirlenmi\u015ftir. Ay\u00e7i\u00e7ek ballar\u0131 de\u011fi\u015fken bir fenolik profili g\u00f6stermektedir.\u000bAy\u00e7i\u00e7ek ballar\u0131n\u0131n 3&#8217;te 2&#8217;sinde bir flavonoid olan kuersetin bulunmu\u015ftur.
